1 ( 4 to 5 lbs.) beef brisket
1 C Stubbs spicy Barbecue sauce
1/4 C Worcestershire sauce
1/2 C Liquid Smoke (mesquite)
4 heaping tsp ground fresh garlic
3 lemon peppers, ground
1/2 C Lime Chile vinegar
2 tsp black pepper, coarse ground
1 finely minced onion
Preheat oven to 275F.
Mix ingredients for sauce. Place the brisket in a large Pyrex baking dish (fat side down) and stab repeatedly with fork. Pour approximately half of the sauce on the brisket. Turn brisket over in dish and pour remaining sauce on it. Seal the dish with heavy-duty aluminum foil.
Bake at 275F for 5 to 6 hours. Remove from oven and allow to stand for 1 hour before slicing. Slice across the grain, and serve with sauce. Makes 8 to 10 servings.
Be sure to use a Pyrex baking dish or very heavy metal pan.
